Oatmeal cookies are easy and delicious, the cookie version of comfort food. We went with golden raisins, though you can use whatever raisins (or even currants) that you prefer. The sweetness of the golden raisins goes very well with the pleasant bitterness of chopped black walnuts. If, like Holly’s husband, you find raisins in oatmeal cookies offensive, you can always omit them and add chocolate chips instead. Chocolate also goes very well with black walnuts. As always, these cookies convert easily to gluten and dairy free.

Makes about 4 dozen cookies.
Ingredients
1 cup (2 sticks) unsalted butter or dairy free butter, room temperature
1 cup brown sugar (light or dark), packed
1/2 cup plus 2 tablespoons (10 tablespoons) granulated sugar
2 large eggs, room temperature
1 tablespoon vanilla extract
1 1/2 cups all-purpose flour or gluten free 1-1 flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1 1/2 cups golden raisins, picked over
1/2 cup chopped black walnuts, optional but so delicious
3 cups quick oats
Directions
Preheat the oven to 350°F. Grease a few large cookie sheets or line with Silpat or parchment paper.
In a large mixing bowl, cream the butter and sugars together until fluffy. Beat in the eggs one at a time, then add the vanilla.
In a medium bowl, whisk together the flour, salt, baking soda, cinnamon, and nutmeg.
Add the dry ingredients to the butter and sugar and stir until blended. Fold in the raisins, oats, and optional walnuts. You can chill the dough if desired.
Scoop about a tablespoon of dough onto your cookie sheets, leaving an inch between them.
Bake until the edges of the cookies are just starting to turn golden brown, about 10 to 12 minutes. Let them cool and firm up a bit before removing them from the cookie sheets.
