Cheesy Potato Hash

This is a delicious way to use up extra potatoes and eggs. It's comfort food at it's best! If you use dairy free cheese this recipe will be gluten and dairy free. You can add more veggies or meat if you want to customize it a bit. The hash makes a perfect base for all of your spring eggs!

Ingredients
  

  • 3 medium sized potatoes diced (peeled if desired)
  • 1 medium sweet potato peeled and diced
  • 1 onion chopped
  • 2 cloves of garlic chopped
  • ½ of a red or green pepper chopped small
  • 2 teaspoons fresh thyme leaves or 1 teaspoon dried
  • ½ teaspoon of marjoram
  • salt and pepper to taste
  • ½ - 1 cup of shredded cheese of your choice we used cheddar
  • Optional cooked meat of choice chopped (bacon, sausage, veggie sausage, etc.)
  • 6-8 eggs for frying and serving on top of the hash

Method
 

  1. Heat a generous splash of olive oil in a large skillet. Saute the onion, garlic, and pepper over medium heat, until softened and beginning to brown. Add the diced potatoes and cook, stirring occasionally, until they’re fork-tender. At this point, add your seasonings and optional meat, and turn the heat up a bit to brown the potatoes. Use a spatula to flip everything over every once in a while, trying to get some browning on each side.
  2. Once the hash is finished, add the cheese and set aside to get nice and melty. Fry or peach your eggs, and serve the hash with a couple of eggs on top.
