Popovers

Popovers are quicker and easier to make than you might think. Plus, they taste great and are a lot of fun to eat. You can make them sweet or savory, depending on how you want to serve them. Please note that popovers made with gluten free flour don't have really lofty rise, but they still taste delicious! This recipe requires 4 of your fresh eggs.

Ingredients
  

  • 4 large eggs
  • 1 1/4 cups milk or plant milk slightly warm
  • 1 cup flour or gluten-free 1:1 baking flour
  • 3/4 teaspoon salt
  • 3 tablespoons butter or dairy free butter melted

Method
 

  1. Warm the eggs by placing them in a medium bowl and cover with hot water. Let them sit for about 10 minutes.
  2. Preheat the oven to 450°F.
  3. Grease a 12-cup muffin pan or a popover pan with cooking spray or butter.
  4. Add the eggs and milk to a medium sized mixing or batter bowl. Whisk the eggs and milk together until totally combined. Add the flour and salt and whisk until just combined. Lightly whisk in the butter.
  5. Pour the batter into the prepared pan, filling each cup about 2/3 full.
  6. Bake for 15 minutes, then reduce the oven heat to 350°F and bake for an additional 10-15 minutes, until the popovers are nicely brown. Do not open the oven early!
  7. Serve immediately and enjoy!
