Strawberry Jam Chocolate Chip Bars

These homespun bars are quick to make and completely delicious! You'll need one fresh egg for the crust/topping, and the rest of the ingredients are pantry staples. You can use any flavor of jam that you want, and omit or change the chocolate chips to something else. As always, we've included gluten and dairy free substitutions.

Ingredients
  

  • 1 stick unsalted butter or dairy free butter melted
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 1/2 cups flour or gf flour
  • 1 1/2 cups rolled oats
  • 1/2 tsp baking powder
  • Pinch salt
  • 1 cup strawberry jam
  • A generous handful of chocolate chips

Method
 

  1. Preheat oven to 350°F. Grease an 8" pan, then line with baking/parchment paper or foil with overhang (so it can be lifted out and cut once cooled).
  2. Bottom Crust – Melt butter in a microwave proof medium sized mixing bowl. Mix in sugar completely. Add egg then mix until incorporated. Then add flour, oats, baking powder and salt and mix until combined
  3. Keeping a cup aside for topping, dump the oat mixture in and form the crust, pressing with your hands. Spread with jam, sprinkle on the chocolate chips. then use your hands to crumble the remaining oat mixture over the top.
  4. Bake for 30 minutes or so until the top is turning golden brown. Remove and allow to fully cool in the pan before cutting
