Thai-Style Omelet

This is a quick and easy single serving recipe that can be served at any meal. It's traditionally served with fresh raw veggies on a bed of warm steamed rice, but you can serve it any way you'd like. It's naturally gluten and dairy free (check your fish sauce ingredient labels to be sure, though) and both chicken and duck eggs work well. Add some chopped cooked meat or seafood to make it even fancier. Simply double the ingredients for a 2 egg omelet.

Ingredients
  

  • 2-3 tablespoons vegetable oil for frying
  • 1 egg
  • ½ teaspoon fish sauce
  • 1-2 cleaned and chopped scallions green onions, or spring onions
  • Steamed rice and veggies of choice for serving
  • Fish sauce Soy sauce or other sauces

Method
 

  1. Heat the vegetable oil in a frying pan over medium-high heat.
  2. Crack the egg into a small mixing bowl. Add the chopped green onions, fish sauce and beat together with a fork.
  3. In a small/medium frying pan, heat the oil until very hot and shimmery. Carefully pour the egg into the center of the pan and fry for a minute or two.
  4. Using a fork or thin spatula, flip the omelet to the other side and cook for another minute or two.
  5. Turn off the heat and serve the Thai omelet on a bed of warm steamed rice with veggies and your sauce of choice. Enjoy!
