Apple Marzipan Mini Cakes
These little cakes are easy to make but look fancy enough for a party. They’re absolutely delicious, too. If you don’t want to make mini cakes you can just use a 9 inch baking dish. Sift powdered sugar over the top to make them extra fancy. They would also look great as mini-bundt cakes with a simple glaze. As always, gluten and dairy free alternatives are included.
Ingredients
3 eggs
1 cup white sugar
6 tablespoons of butter or plant butter, melted
1 tsp vanilla extract
1 ½ cups all purpose flour or gluten free flour – we used Bob’s Red Mill Gluten Free 1-1
2 tsp baking powder
1/3 cup milk – we used oat milk
1 cup of almond flour
½ cup marzipan, diced into small bits
2 cups apple, peeled, cored, and diced
Optional- powdered sugar
Instructions
Preheat the oven to 350F. Grease or spray a 12 mini cake mold pan or a 9×9 baking dish.
Place the eggs, sugar, butter & vanilla in a bowl and whisk until smooth.
Add the flour & baking powder and stir until just combined, then add the milk and almond flour and stir again.
Fold in the diced apples and marzipan. Using a ladle, spoon the batter into the prepared pans. Bake at 350F for 22 minutes (40-50 minutes if you’re using a large baking pan or cake pan) or until a toothpick comes out clean and the cakes are golden brown on the edges and top. Allow to cool. Sift optional powdered sugar over top and serve. Enjoy!
