Baked Apple Fritters with Allspice and Rum

These fritters are soft and delicious, tasting of rum soaked apples and allspice. While
fritters are traditionally deep fried or pan fried, we opted to bake these to cut down on
both the mess and the calories. The result is delicious, soft fritters that taste like a cross
between apple cake and spice cookies.

Ingredients
● 2 medium apples, peeled and grated
● 1 tablespoon dark or spiced rum
● 1 1⁄2 cups all-purpose flour or gluten free 1-1 flour
● 1/2 cup packed brown sugar
● 1 1⁄2 teaspoons baking powder
● 1 teaspoon ground allspice
● 1⁄2 teaspoon cinnamon
● 1⁄4 nutmeg
● 1⁄4 teaspoon salt
● 6 tablespoons butter or dairy free butter, cold, cut in chunks
● 1⁄2 cup milk or plant milk
● 1 large chicken or duck egg
● 1 teaspoon of vanilla
● Optional – powdered sugar for serving

Instructions
Heat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the grated apples with the rum in a bowl. Let them sit while you mix together the
rest of the ingredients.

In a medium mixing bowl, whisk together the flour, brown sugar, baking powder, allspice,and salt. Break up any brown sugar lumps.

Using a pastry blender, 2 knives, or whatever method you like, cut the butter chunks into
the flour. Blend until the mixture looks like coarse crumbs or meal.

Add the milk, egg, and vanilla to the bowl. Stir thoroughly to blend into the flour mixture. Fold the rummy apples into the batter.

Spoon generous dollops of batter (around 1⁄4 of a cup or so) onto your lined baking
sheets. You’ll have about 8-10 large fritters or 12-14 smaller fritters.

Bake for 12 to 14 minutes until the edges are golden and the centers spring back when
lightly touched. For gluten free, you may want to turn on the broiler for a minute or two
to brown the tops of the fritters a bit more.
