Black Bean Burgers
Burgers that are actually pretty good for you. They work great at regular size, or you can make sliders with them. They work very well as bantam egg-topped sliders! You can also add more veggies and change the spices to suit your taste.
Ingredients
Black Beans – 1 15oz can, rinsed and drained, or 2 cups cooked
½ an onion, finely chopped
1 teaspoon garlic powder
½ teaspoon chili powder, optional
½ sweet potato, cut in small pieces and steamed (microwave steaming works)
½ cup of any other veggies that you want to throw in – corn, sliced greens, chunks of red pepper, etc.
1 egg, lightly beaten
½ cup of corn flour – you can substitute rice flour or oat flour or even cornmeal
Salt and pepper to taste
Directions
Mash all ingredients together in a large mixing bowl, or place in a food processor and pulse until blended but still chunky.
Using about ⅓ cup of the mixture, form into patties and place in large frying pan or skillet. Cook on each side for 4-5 minutes or until cooked through. Serve your favorite way and enjoy! Avocado goes very well with these burgers.
