This is one of Chrisie’s quick, easy, and really delicious recipes. It’s a good way to use up both eggs and leftovers. You can add veggies, meat, cheese, and even use the sauce of your choice. We went with traditional pizza sauce because we love eggs and tomatoes together. You can used hollandaise sauce, cheese cause, white sauce, etc. As always, we include our gluten and dairy free alternatives.
Ingredients
Premade pizza crust. – We used a purchased cauliflower crust for our GF DF version
1 jar/can of pizza sauce.
1-2 cups of cooked veggies, meat, or any other toppings you desire. We used steamed broccoli
2 cups of shredded cheese. We used Aldi’s dairy free mozarella cheese
6 eggs
A splash of milk, cream, or water
Directions
Preheat oven to 500 degrees F.
If you’re making the crust from dough, follow your recipe or package instructions.
For prebaked crusts, place on a pizza pan and layer on sauce, toppings, then cheese.
Bake the pizza for 10 minutes.
While the pizza is in the oven, scramble the eggs.
Beat the eggs with the milk, cream, or water, and cook in a skillet over medium/low heat. Stop as soon as the eggs have reached a very soft scrambled consistency.
Remove the pizza from the oven, and spread the eggs over top, add salt and pepper and any other spices to taste. Return pizza to oven for another 10 minutes.
Allow to cool for 10 minutes. Serve and enjoy!
