Easy and delicious corn bread is perfect for serving at summer picnics or barbecues. This is a sweet cornbread, but you can adjust the sugar up or down to suit your taste. As always, we’ve included our variations for dairy and gluten free cornbread.
1 cup of all purpose flour – we used Bob’s Red Mill 1-1 gluten free flour
1 cup of yellow cornmeal
2/3 cup of granulated white sugar
1 teaspoon of salt
3 1/1 teaspoons of baking powder
1 fresh egg
1 cup of milk – we used oatmilk’
1/2 cup vegetable oil
Preheat oven to 400 degrees F. Grease an 8×8 inch pan and set aside.
In a large bowl, whisk together the flour, cornmeal, sugar, salt, and baking powder. Add egg, milk, and vegetable oil and stir until ingredients are combined. Pour the batter into the pan.
Bake in the oven for 25-30 minutes or until a tester comes out clean.
Let cool slightly before eating and enjoy!
