Deconstructed Scotch Eggs
Traditional Scotch Eggs are just barely hard boiled eggs wrapped in sausage, coated with bread crumbs, and deep fried. On the day I was set to test my recipe I found that I just couldn’t manage it for whatever reason. Perhaps the kitchen gods were displeased with me? Whatever the case, I decided to do this extremely simple and lighter version and use them for appetizers or snacks with drinks. Plenty of room for variation, as well. We used gluten free bread and veggie sausage but you are free to choose whatever components you’d like. This made about 2 dozen appetizers.
Ingredients
8 hard boiled eggs, sliced, tops set aside
Sausage of your choice, cooked, either slices into rounds or made into mini patties. (We used Impossible Sausage)
6-8 pieces of toasted bread, with approximately 1.5″ diameter rounds cut out
Mayonnaise or Mustard
Directions
Assemble the stacks.
Place a dab or mayonnaise or mustard on the bread base. Top with egg slice and place a sausage round on top of that. Use a toothpick to hold the stack together if necessary. Sprinkle with dill or paprika and serve. Enjoy!
