Easy Huevos Rancheros
This is our non-authentic version of what was traditionally a hearty ranch hands’ breakfast. You can go all out and make your own salsa or pico de gallo, or you can save time and use purchased sauce from a jar. No judgement! Use gluten and dairy free substitutes to keep this dish safe for those with food intolerances.
1 jar of salsa
4 tortillas – we used corn tortillas to stay gluten free
1/2 cup shredded cheese or non dairy cheese
1 can of refried beans – we used vegetarian refried black beans
1 lime – optional
In a large skillet, heat refried beans until steaming and warmed through. Divide onto 4 plates. Wipe out skillet and heat salsa to a simmer. Break eggs into salsa. Cook over medium/low heat 5 minutes or so minutes or until eggs are cooked through.
While eggs are cooking, warm tortillas. Either warm them each in another skillet, or gently steam them in the microwave. Place a tortilla on each plate. Top with an egg, salsa, and cheese. Squeeze lime over plates to drizzle with juice. Serve and enjoy!
