Ella’s Easy Baked Churros
Ingredients
1 cup water
⅓ cup butter or dairy free butter
2 tablespoons brown sugar
1 cup flour or gluten free all purpose flour
1 teaspoon vanilla extract
2 eggs, room temperature
cinnamon and sugar, mixed together in a bowl
melted chocolate, optional
Directions
Preheat oven to 350°F
Add water, butter, and brown sugar to a medium sized saucepan. Place over medium/low heat and stir until the butter has melted, sugar has dissolved, and mixture just comes to a boil.
Remove from heat and stir in the flour. Once the flour is blended in, add vanilla extract and then eggs, one at a time. The batter may look curdled or separated, but keep mixing until it comes together.
Transfer into a piping bag with a large round or star tip, or cut the corner off of a large ziploc bag. Pipe out thick 3 or 4 inch strips of batter onto a baking sheet covered with silpats or parchment paper.
Bake for 10 minutes, then remove from oven. Heat broiler, and place churros under for about 2 minutes or until nicely browned.
Dredge each churro in melted butter, then cinnamon and sugar. You can also drizzle with melted chocolate. Enjoy!
