Fresh Strawberry Cookies

Ingredients
2 large eggs, room temperature
¼ cup lemon juice
1 cup (2 sticks) melted butter or dairy free butter
1 teaspoon vanilla
1 cup granulated sugar
3.5 cups all purpose flour or gluten free 1-1 flour
3 teaspoons baking powder
2 cup chopped fresh strawberries

Directions
Pre-heat oven to 350F (180C) For easy clean up, line 2 or 3 cookie sheets with parchment paper or aluminum foil. Set aside.

In a large mixing bowl, whisk together the eggs, lemon juice, melted butter, vanilla and sugar. Mix until well blended.

Add flour and baking powder and mix until combined, then gently fold in the strawberries and white chocolate chips. Using a regular table spoon, drop generous spoonfuls of batter onto the cookie sheets. Bake for 13-15 minutes or until just starting to turn golden on the edges. Allow them to cool for about 10 minutes, then eat some cookies!
