
This recipe uses one egg, and is essentially homemade mayo with garlic added to it. It makes a delicious dip or a sauce for veggies or fish, or on sandwiches and in salads.

Ingredients
1 large Egg, room temperature
1 tablespoon Lemon Juice
1 clove Garlic, finely minced or crushed
1/2 teaspoon Dijon Mustard
1/2 to 3/4 cup Olive Oil
Salt and Pepper to taste
Directions
In a medium bowl, using a hand mixer or a blender, whisk together the egg, lemon juice, garlic, and mustard.
Beating constantly, add the oil, drop by drop, allowing each addition to incorporate into the egg mixture before adding more. As the mixture emulsifies, you can begin adding a bit more of the oil at a time until fully incorporated.
Season to taste with salt and pepper. Cover and chill. Keep in mind that the garlic flavor will intensify with each day.
