Joe’s Shrimp Burgers with Avocado and Old Bay Sauce

These burgers are delicious and very easy to customize. Lemon-based herbs would make a great variation. As always this recipe easily converts to gluten and dairy free. Make sure you grease pans or racks well because these burgers can get a bit sticky.

Avocado Sauce – Ingredients

1 ripe avocado
A handful of cilantro, well rinsed and coarse stems removed
2 tablespoons lime juice
2 tablespoons mayonnaise
½ – 1 teaspoon of Old Bay Seasoning
Salt salt to taste

Directions

Place the avocado, cilantro, lime juice, mayonnaise, Old Bay, and salt in the bowl of a food processor and puree until smooth. Cover and refrigerate.

Shrimp Burgers – Ingredients

1 lb shrimp, peeled and deveined
1 small onion, roughly chopped
1 small zucchini, finely grated, moisture squeezed out
1 tablespoon fresh herbs of choice (parsley, dill, oregano, thyme, marjoram, etc)
1 tablespoon lemon juice
1 large egg, room temperature, lightly beaten
½ cup breadcrumbs or cracker meal

Directions

Place shrimp and onion in food processor and pulse 3 or 4 times to start roughly chopping the shrimp. Add the herbs and pulse a few more times. Mixture should still have some chunks in it.

Empty the mixture into a medium sized bowl. Add the zucchini, lemon juice, egg and breadcrumbs and roughly mix everything together. When the mixture looks mostly combined, form into 4 or 5 patties. To help them stay together, refrigerate for an hour or so to let the egg and breadcrumbs bind everything.

You can grill, fry, or bake these burgers. We pan fried them on medium/low heat, 4-5 minutes per side.
