Mango Nectar Cake

Easy and delicious and one bowl! Uses 4 eggs. Traditionally made as a bundt cake, but I’ve made it as a layer cake as well, with coconut frosting. So good. If you want a really big cake or a layer cake you should double the recipe. Can easily be made gluten free.

1 yellow cake mix or gluten free yellow cake mix

3/4 cup mango nectar

1/2 cup oil

4 eggs

1 teaspoon lemon or vanilla extract

Preheat oven to 350. Combine the cake mix and eggs, oil, and extract, then add the mango nectar; beat until just combined. Pour into a greased and floured tube or bundt pan. Bake for 35-40 minutes. Glaze if desired. Enjoy
