Pizelle Cookies
Easy, delicious, and essential for an Italian Christmas! They’re just as yummy if you make them gluten and dairy free. Experiment with different extracts to find your favorite flavor!
Ingredients
3 eggs, room temperature
¾ cup of sugar
1 ¾ cups of all purpose flour or gluten free all purpose flour
2 teaspoons of baking powder
1 ½ teaspoons of vanilla extract
¼ tsp anise extract (optional)
8 tablespoons unsalted butter or dairy free butter, melted
¼ teaspoon sea salt
Directions
Whisk together your eggs, sugar, vanilla and anise in a medium bowl.
Add flour, salt, and baking powder and whisk thoroughly until batter is smooth.
Whisk in the melted butter, making sure it’s completely incorporated into the batter.
Pre-heat your pizzelle maker. They are all a little different so follow your own manufacturer’s instructions.
Once it is heated, add about a tablespoon of your batter to the middle of each pizelle iron. Close and cook for about a minute, or until the pizelle is golden brown on the edges. After you’ve made a couple you’ll know just how much batter to use and how long to cook them.
As each Pizelle finishes cooking, remove from the iron and place on a rack where they will cool and crisp up. Repeat until you’ve used all of the batter. Sprinkle with powdered sugar, drizzle chocolate, or enjoy as is with a cup of coffee.
