Pizza Egg Bake

This recipe is essentially a pizza flavored savory bread pudding. But with 6 eggs and plenty of veggies, it’s a great way to sneak in lots of healthy stuff. Gluten and dairy free substitutions are easy to make and still delicious. Feel free to change up the veggies and add meat, veggie meat, and other types of cheese.


6 eggs

1 onion, peeled and chopped

1 – 2 cups of veggies – broccoli, cauliflower, and mushrooms are all great

4 slices of bread cubed (4-6 slices gluten free bread depending on loaf size)

2 cups milk (use unsweetened soy, oat, or almond milk for dairy free)

1-3 cups shredded mozarella or cheese of your choice (dairy free cheeses like Daiya also work)

1 cup pizza sauce

1tsp salt

1tsp pepper

1tsp dried mustard


Preheat oven to 350

While the oven heats, sauté onion and veggies in skillet over medium/low heat until starting to brown and soften. If including meat, make sure it is precooked as well.

Ina large bowl, beat together eggs and milk.

Add salt, pepper and dried mustard.

In a large 13×7 baking dish layer bread cubes, then veggies (and any meat, etc) and cheese.

Pour egg mixture over top of layers and place in oven.

At 30 minutes, pour 1 cup of pizza sauce on top of the dish and bake for another 10-15 minutes.
