Rhubarb Gin Fizz
The base for this cocktail recipe is Stephanie Thurow’s Rhubarb Shrub. You’ll want to make the shrub a few days before you make the cocktail. It’s super easy and delicious!
For the cocktail, I modified the shrub slightly. I divided it down to ⅓, and used white wine vinegar instead of apple cider vinegar. Either one will work, though. Clean and chop 1/2 cup of rhubarb and add it to a clean canning jar with ½ cup of sugar.
To make a Rhubarb Fizz:
2 oz Gin – you can also substitute Vodka
2 oz Rhubarb Shrub
1 Egg White
Ice
Place ingredients into a cocktail shaker and shake thoroughly to make the egg white frothy. Add ice and shake again. Pour through a strainer and into your favorite cocktail glass. The egg white will form a frothy layer on top of the glass. Make this a mocktail by using sparkling/seltzer water instead of gin. Enjoy!
