Savory Baked Oatmeal and Veg
Savory oatmeal – sounds weird, tastes great. We love to serve it with a side of eggs for a healthy, hearty breakfast. It reheats well, so its ideal if you’re doing meal prep. You can customize the veggies and seasonings for your own version. As always, we include susbstiuttions for gluten and dairy free oatmeaL. Try adding 1 1/2 teaspoons curry powder for a unique taste.
Ingredients
1 teaspoon olive or avocado oil
1 cup tender asparagus pieces
2 cups chopped broccoli florets – you can used steamed for easy prep
1/2 cup green peas
1 teaspoon garlic powder
1/2 teaspoon dried thyme
2 cups old fashioned oats
1 teaspoon baking powder
2 cups milk or non dairy milk
2 eggs, beaten
1/2 cup of shredded cheese or nondairy cheese
Directions
Preheat oven to 350F. Grease an “8 or 9” square baking dish.
Heat oil in a large skillet over medium heat. Add the vegetables and cook at least 5 minutes, or until softened. Add seasonings and cook for a couple of minutes, stirring so everything gets well incorporated. Remove from heat and set aside to cool slightly.
Combine the rest of the ingredients, including the cheese. Add the vegetables and let mixture sit for 5-10 minutes to allow for the oats to soften.
Pour into the prepared baking dish and flattened top.
Bake for 30 minutes, until all liquid has been absorbed and oats are set. Cool before slicing.
