Strawberry Donuts

These Strawberry Donuts are quick and easy to make. They’re not super sweet, so they’re great for breakfast or as a little treat with coffee or tea. You can make them with either chicken or duck eggs, and we include substitutions to make this recipe gluten and dairy free. This recipe make around 10-12 donuts, so you’ll need 2 six cup donut pans, or bake the recipe in two batches.

Ingredients

1 cup all-purpose flour or gluten free 1-1 flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 cup vegetable oil
1/2 cup buttermilk or dairy free buttermilk (add ½ teaspoon lemon juice to plant milk, stir, and let it sit for at least 10 minutes to curdle)
2 chicken or duck eggs
1/2 cup brown sugar
1/2 teaspoon vanilla
A generous 3/4 cup fresh strawberries, chopped small

Glaze
1 cup of powdered sugar
1 tablespoon of strawberry jam (remove any chunky bits of strawberry)
1 tablespoon of water or milk or plant milk

Instructions
Preheat the oven to 350 degrees F. Spray or grease your donut pan and set aside. This recipe makes about a dozen donuts so you either want to have a 12 count donut pan, two 6 count pans, or repeat the bake with the second batch using the remaining half of the batter.

In a medium to large size mixing bowl, add the flour, baking powder, salt, and nutmeg. Whisk to blend the dry ingredients together.

Add the oil, buttermilk, eggs, sugar, and vanilla and stir until combined.

Add chopped strawberries, and fold in gently with a spatula or wooden spoon.

Spoon the batter into the donut pans and bake for 15-18 minutes or until the donuts are browned and spring back when touched.

Place the pan on a rack and allow to cool for about 10 minutes, then turn the donuts out to cool the rest of the way.

Once the donuts are completely cool you can make and apply the glaze. If glaze is too runny add a bit more powdered sugar until it reaches desired consistency.

In a small mixing bowl, add the milk and jam to the powder and stir until a glaze has formed. Use a teaspoon to drizzle the glaze all over the donuts. Allow the glaze to dry and serve.
