
This recipe is another easy and delicious way to use your eggs. This dish originated in China, so this is our loose interpretation. The sauce makes the eggs into sort of a sticky comfort food, especially over rice. It is also very quick to make, so perfect for busy days. As always, gluten and dairy free substitutions!

Ingredients
4 large eggs
green onions, chives, and/or sesame seeds for garnish
For the Sauce
1 tablespoon ketchup
1.5 tablespoons soy sauce or gluten free soy sauce
0.5 tablespoon rice vinegar
1 teaspoon sugar
1 or 2 cloves of minced garlic
1/4 teaspoon smoked paprika or if you like it hot, use 1 tablespoon chili oil
1/3 cup water
2 tablespoons cornstarch
Instructions
In a small bowl, combine the ketchup, soy sauce, rice vinegar, sugar, garlic, paprika or chili oil, water, and cornstarch. Mix well.
Oil and heat a large skillet on medium. Once hot, add the eggs and pan-fry to your liking.
Pour the sauce over the eggs and let it simmer for another couple of minutes until the sauce thickens. It happens pretty quickly.
Garnish with chives or green onion and sesame seeds, then serve over hot rice. Enjoy!
