Amy’s Morning Taters and Eggs

This delicious recipe for Amy’s Morning Taters and Eggs come to us from Amy Van Leuven of the Good Egg Company! Amy uses duck eggs but chicken eggs will work just as well. We love this recipe on a lazy Saturday or Sunday morning. It’s also fantastic for lunch and dinner too.

Ingredients

4-6 fresh duck or chicken eggs

5 honey gold organic potatoes diced
1 whole shallot chopped
2 cloves of garlic minced
3 strips thick cut uncured bacon
6 or so cherry tomatoes halved
Two handfuls of organic spinach or organic power greens from Costco (earthbound farm)
Seasonings: salt, pepper, sage, Bragg sprinkle 24 herbs and spices

Directions

Dice bacon put in cast iron once the grease from the bacon is coating the pan add in diced potatoes. Stir and cover. When potatoes start to soften/ brown add chopped shallots and garlic. Once everything starts to look crisp add greens and tomatoes. Crumble goat cheese over the top so it gets gooey while you cook your eggs. Prep other pan with avocado oil, fry eggs. Leave yolk runny so all that glorious yolk can run over the potatoes.

Plate up taters! top with egg, goat cheese, and green onion. Bon appetite!
