Biscuits and Sausage Gravy

We’re coming off of a stretch of frigid winter weather, and we’re still craving comfort food. You need some carbs for energy while you’re out shoveling snow away from the coops! So, we thought it was the perfect time for biscuits and sausage gravy.

We’re making an easy sausage gravy (or plant-based sausage for Holly) with drop biscuits. Our drop biscuit recipe uses 1 egg. You can also make up your drop biscuits from a box of Bisquick. We’re not going to judge – we were raised on it!

Drop Biscuits (if you’re not using Bisquick)

This recipe makes about a dozen small/medium biscuits or eight big ones.

Ingredients
2 cups all-purpose flour or gluten free 1-1 flour
1 tablespoon sugar
1/2 teaspoon salt
1 tablespoon baking powder
1/2 cup cold butter, cut into pieces
1 fresh egg
2/3 cup milk or dairy free milk

Instructions
Preheat oven to 450 degrees.
Line a baking sheet with parchment or silpats or grease a big cast iron skillet and set aside.
Whisk the dry ingredients together in a large bowl.
Use a pastry cutter to cut the butter into flour mixture until it resembles coarse meal with some pea-sized chunks of butter left.
Use a big spoon to scoop out the dough and place it on the prepared baking sheet or skillet. Bake for 10 to 15 minutes or until golden brown on top.

Sausage Gravy

Ingredients
1 pound ground sausage or plant based sausage or your sausage of choice
1/4 cup all-purpose flour or gluten free 1-1 flour
2 1/2 cups milk or plant based milk (we used Oat Milk)
1 teaspoon garlic powder
Salt and pepper to taste (white pepper is also good here if you have it)

Instructions

In a large skillet over medium-high heat, crumble and brown the sausage. Do not drain the grease away. If you’re using a plant based sausage that doesn’t render a lot of fat, add a generous splash of olive oil.

Sprinkle the flour over the sausage and stir. Cook for 3 to 5 minutes, stirring constantly.

Gradually add the milk, stirring well after each addition. Reduce heat to a simmer and allow the gravy to thicken, still stirring frequently. Add salt and pepper to taste. Serve over warm biscuits.
