
Blueberry Mint Fizz is a summery cocktail that is easy to make and very refreshing on a hot day. We like this best with spearmint, but peppermint and most other types of mint work as well. The fresh egg white makes this cocktail extra fancy, but you may want to omit it if you are serving to anyone with a compromised immune system. Shake the drink without ice first, allowing the egg white to get fizzy.

Ingredients
2 oz London Dry Gin
3/4 oz (1.5 tablespoons) blueberry mint simple syrup
1 tablespoon lemon juice fresh
1 egg white
Ice
Fresh mint and/or blueberries for garnish
Instructions
Fill a coupe glass with ice.
To a cocktail shaker, add gin, blueberry syrup, lemon juice and egg white. Put on the lid and shake vigorously for 15 seconds.
Add the ice and shake the mixture again until it is thoroughly chilled.
Remove the ice from the coupe glass, then strain the drink into the chilled glass.
Serve with a toothpick speared with fresh blueberries.
Blueberry Mint Simple Syrup
Makes 1½ cups
Ingredients
1 cup fresh blueberries
1 cup sugar
1 cup water
1 sprig of fresh spearmint or other mint leaves
To make the simple syrup – Add all of the ingredients for the simple syrup to a medium/large saucepan and bring them to a boil. Using a potato masher or a pastry blender, mash the blueberries and crush the mint leaves together. Let the syrup continue to simmer and thicken. Remove from heat, and strain into a jar with a tight-fitting lid, discarding solids. Refrigerate for up to 2 weeks.
