Oatmeal Pancakes

 These oatmeal pankcakes are easy to make and they’re also soft, fluffy, and delicious. You’ll need 2 fresh eggs, either chicken or duck, or more if you’re serving eggs with the pancakes. They go very well with most toppings – butter and syrup, fruit and whipped cream, your favorite jam, Nutella, etc. As always, we include substitutions to make this recipe gluten and dairy free.

Makes about a dozen medium sized pancakes.

Ingredients

1 cup all-purpose flour or gluten free 1-1 flour
½ cup quick oats
2 tablespoons granulated sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
½ cup Greek yogurt or dairy free plant yogurt
1 cup milk or creamy dairy free milk
2 chicken or duck eggs
1 teaspoon vanilla
2 tablespoons vegetable oil

Instructions

In a large mixing bowl, combine the oats with the flour, sugar, baking powder, baking soda and salt. Whisk until blended, then set aside.

Combine the yogurt, milk, eggs, vanilla and oil in a small mixing bowl. Whisk thoroughly until all of the wet ingredients are thoroughly mixed together.

Pour the wet ingredients into the dry ingredients. Stir until just combined, do not over mix. Let the batter sit for 5-10 minutes to thicken.

Heat a griddle or a skillet over medium heat on the stovetop. Spray the pan with nonstick baking spray or grease/butter it.

Once the pan has warmed, drop about 3 tablespoons of batter for each pancake. Cook until bubbles appear on the surfaces of the pancakes, then flip and cook for another 1-2 minutes, or until the other side has browned and the pancakes have cooked through.
Transfer the cooked pancakes to a plate and cover with a towel. Repeat until all the batter has been used.

Serve warm with syrup, butter, jam, nutella, or whatever toppings your family prefers. You can also sprinkle chocolate chips on top of or between the pancakes for a slightly less healthy but very delicious breakfast.
