Skillet Hash with Potatoes, Apples, and Sausagephoto by Allison McAdams 

Ingredients

Olive oil or butter, a couple of tablespoons
1 lb bratwurst or sausage links of choice, or veggie sausage, sliced into rounds
1 lb potatoes, peeled if desired, cut into cubes
2 sweet-tart cooking apples (Granny Smith, Pink Lady, Cortland, etc)
1 white or yellow onion, chopped
Salt and pepper to taste
A handful of fresh herbs (thyme, rosemary, sage etc), washed, rolled, and sliced, or a generous ½ teaspoon dried of any or each

6-8 eggs, or however many you’d like.

Instructions
Heat half of the oil in a large skillet over medium heat. Add the sausage and onions and cook until the sausage is browned and fully cooked. Remove the sausage from the skillet and set it aside.

Add the remaining oil to the skillet. Add the cubed potatoes and a generous pinch of salt. Cook for 10 to 15 minutes, stirring occasionally, until the potatoes are tender and starting to brown nicely.

Stir in the diced apples and fresh herbs. Cook for another 5 minutes or so until the apples are warm and slightly soft, but still hold their shape.

Return the cooked sausage to the skillet. Toss everything together until all ingredients are reasonably well mixed, season with extra salt and pepper, and serve warm. Fry or poach your eggs and serve each portion of hash with the eggs on top. Enjoy!
