
We decided to close out our June Strawberry recipes with this pretty little cocktail. It is absolutely delicious with fresh strawberries and a fun, fizzy egg white. Because of the raw egg white, you may want to use pasturized eggs if you’re going to be serving this drink to anyone elderly or with a compromised immune system. This cocktail is naturally gluten and dairy free.

First, make the strawberry simple syrup.
4 oz strawberries, stems removed and sliced (a bit under a cup)
1/2 cup water
1/2 cup granulated sugar
Combine the strawberries, water, and sugar in a saucepan over medium high heat.
Bring to a boil, reduce to a simmer, and cook for 20 minutes, until the strawberries are very soft.
Carefully strain out the strawberries from the simple syrup, making sure not to press down on them. This will make your syrup cloudy. Chill the syrup and reserve strawberries for ice cream or something else yummy.
In a cocktail shaker, combine: ¼ cup of gin
2 tablespoons of lemon juice
1 tablespoon of strawberry syrup
1 egg white
Shake the ingredients together, then add a handful of ice and shake again. Strain into a chilled coupe or other fancy glass and enjoy!
