
This easy dish was inspired by a thin omelet traditionally made in Thailand. It’s quick and easy to make and can be part of a delicious light lunch or any other meal. The omelet is traditionally served with raw vegetables and steamed rice. We love it over steamed broccoli and rice with a splash of soy sauce, or with some fresh sprouts. If you like it spicy, add some chili sauce, or some chopped hot peppers. You can also add chopped meat or seafood to the omelet.
If you’re cooking for more than one person you can simply mix the ingredients together in one batch, then pour and cook the individual omelets separately. - Heat the vegetable oil in a frying pan over medium-high heat.
- Crack the egg into a small mixing bowl. Add the chopped green onions, fish sauce and beat together with a fork.
- In a small/medium frying pan, heat the oil until very hot and shimmery. Carefully pour the egg into the center of the pan and fry for a minute or two.
- Using a fork or thin spatula, flip the omelet to the other side and cook for another minute or two.
- Turn off the heat and serve the Thai omelet on a bed of warm steamed rice with veggies and your sauce of choice. Enjoy!
