White Bean Apple Burgers with Thyme and Sage

These White Bean Apple burgers taste like Fall. The thyme and sage smell and taste so good! Try serving them with smoked cheese for the ultimate taste experience. You can use any kind of white bean that you’d like. I prefer Cannellinis because they’re usually a bit larger than most and also nice and soft. We know it’s molting season, so you only need one egg for this recipe.

White Bean Apple Burgers with Thyme and Sage

These burgers are easy to make and pretty healthy, too. They taste and smell delicious because of the herbs, and the apple is the perfect addition. This recipe is naturally gluten and dairy free. You can use any firm apple for this recipe, and you can swap out the cannellinis for other beans as well.

Ingredients
  

  • 1 can Cannellini beans rinsed and drained
  • 1 large apple I used Ginger Gold because it’s what I had on hand
  • 1 cup of quick cooking oats
  • 1 egg
  • 1 tablespoon thinly sliced fresh sage or ½ teaspoon dry
  • 2 teaspoons fresh thyme leaves or ½ teaspoon dry
  • Salt and pepper to taste

Method
 

  1. Grab a large skillet, a mixing bowl, and a potato masher or pastry blender.
  2. Wash your apple and cut it into small chunks. No need to peel unless you want to.
  3. To the mixing bowl, add the apple, the beans, and the oats. Use a potato masher or pastry blender to mash the beans and mix everything together pretty well.
  4. Add the herbs, egg, salt and pepper. Mix well with a spoon. Let the mixture sit for 30 minutes in the fridge.
  5. Add oil or spray the skillet and place over low/medium heat. Using a large spoon, ladle, or your hands, scoop out about ½ cup of bean mixture. Form it into a burger-sized patty in your hands and pat to desired thickness. (Having slightly wet hands helps stop sticking and lets you form a neater burger.)
  6. Cook burgers until browned on each side, flipping halfway through.
  7. You can also bake these burgers in a 400F oven for 20 minutes, flipping the burger halfway through.
